The best chicken soup…ever

Are you needing an easy, healthy and delicious soup recipe? I just made this yummy soup over the weekend and I can not get enough of it. Here is what you need:
- Large soup pot
- 2 tablespoons of organic Coconut Oil
- 4 32 oz of Turkey broth
- 1 sweet onion diced
- 3 cloves of garlic peeled and pressed
- 4 organic carrots peeled and diced
- 4 celery stalks diced
- 2 parsnips peeled and diced (they can be hard to find from time to time)
- 3 zucchini cut in round slivers
- 1 bunch of parsley chopped
- 1 bunch of kale chopped
- 1/2 of shredded cabbage
- 3 organic bay leaves
- Kosher Salt - to taste
- Cracked Pepper - to taste
- 1 teaspoon dried organic Oregano
- 3 boneless, skinless, organic Chicken breasts
- LOVE
Step 1: Peel and dice the onion
Step 2: Place coconut oil into the large pot and melt on medium heat. Once oil is melted and the pot is hot add the diced onion. Watch for the onion to turn translucent. Stir occasionally to prevent burning.
Step 3: Chop the carrot, celery, parsnip and zucchini
Step 4: Press the garlic and add to the onions. Garlic burns very easy so make sure you stir and potentially lower the heat.
Step 5: Add the chopped vegetables to the onions and garlic. Sauté the vegetables until soft.
Step 6: Shred the cabbage, chop the kale and parsley into bitesize pieces
Step 7: Once the vegetables are soft add my favorite herb…the bay leaves. I love the smell
Step 8: Add the all the broth and stir
Step 9: Add the cabbage, kale and parsley to the vegetables broth and stir. Cook for about 5 minutes so the cabbage and kale cook down a bit.
Step 10: Add the oregano, pepper and salt. (feel free to change these measurements to your taste)
Step 11: Add the chicken breasts
Step 12: Stir the soup, lower the temperature to low, add the lid and let it simmer for a minimum of 1 hour.
Step 13: After an hour pull the chicken out and shred the chicken breasts and add the chicken back to the soup.
Step 14: The most important ingredient is LOVE. When you are cooking and preparing the yummy soup make sure to have happy thoughts and add LOVE in your soup. That way your soup will have have an extra special ingredient
Sometimes I add rice or noodles to add a little extra comfort. If you are going to add the rice or noodles prepare them separately and then add them in the bowl with the rest of the soup you are going to eat. If you add the noodles or rice to the entire soup mixture then they absorb a lot of the broth and the noodles get soggy. I always like to freeze my soup so that I can have it for lunch or for dinner. It is a great lunch to bring to work! It always tastes better the next day. This soup should sever eight.
